Yesterday my 12 year old twin boys made homemade pizza. They rolled out the dough by hand, rolle up some sticks of mozzarella cheese in the crust before laying out the homemade pizza sauce and lots of cheese pepperoni and bacon. After it had baked and was almost done, they took it out of the oven and brushed garlic butter along the top of the crust on the edges and then sprinkled some Parmesan cheese on it and put it back in to finish baking. The result was a mozzarella cheese stuffed crust pizza that had a crust like eating mozzarella sticks with French garlic bread.
I tried to create a new appetizer. These are called Southwestern Egg Rolls. I diced up a couple of chicken breasts and grilled it with a little avocado oil, salt and pepper. The ingredients laid out are, from top left, avocado oil, finely minced red bell pepper, yellow corn, spinach, diced jalapeno pepper, black beans, kosher salt, ground pepper, ground cumin, Chipotle chili powder, cayenne pepper, parsley flakes and flour tortillas. After cooking all of the ingredients together, you add a good amount of Monterey Jack cheese until it's all melted, you roll up the filling inside a tortilla and use a toothpick to keep it closed and put them all in the freezer for a few hours so they bind together. Then take them out and deep fry them in hot oil for about 6 minutes each. then take them out and cut them at an angle and serve with some avocado ranch dip and it is amazing.
Since I don't like tomatoes, I decided to make a BLA instead of a BLT. Bacon, lettuce and avocado. Toasted bread with mayonnaise on one side of the bread and ranch dressing on the other piece. Crispy, chewy bacon, fresh, ripe avocados and cold, crispy iceberg lettuce. Now, my whole family tried it and they are addicted. It's light, but filling and refreshing.
Tried something a little different this time for dessert. A nice fresh chocolate chip cookie on the bottom, some Neapolitan ice cream (chocolate, vanilla and strawberry), another chocolate chip cookie on top to make a sandwich. then some whipped cream and a maraschino cherry on top, and some double chocolate fudge syrup drizzled over the top.
(Second part of Mac and Cheese)I mixed together, in a blender, 4 eggs, 3 cups of whole milk, the sugar and salt and blended. Then i slowly poured the milk mixture into the center of the top layer, very slowly, until I can see the milk just below the top layer of cheese. Then, I cover the food with the cast iron lid and I put it in the oven at 375° for 30 minutes. I take it out of the oven and remove the lid and place it back in the oven for another 30 minutes to brown the cheese on top. I then remove it from the oven and let it sit for 15 minutes before scooping out a serving and finally getting to eat it. yum!
